Duck Roast Time Calculator
Duck roast band, 165 F finish, and thaw days from bird weight.
What it does
Roast duck rewards patience and punishes thermometers left in drawers. Rich dark meat over a fat layer needs full time plus a verified 165 F finish, and stuffing stretches the roast further.
The tool above takes duck weight with stuffed or not in pounds or kilos. It returns the time band, the safe temperature, and fridge thaw days.
The default 5 lb unstuffed bird at 350 F needs 1 h 40 min to 1 h 55 min with 2 fridge thaw days. The metric mirror of 2.27 kg reads exactly the same band.
USDA poultry guidance sets the 165 F endpoint for all birds with fridge thaw pacing near a day per 4 lb. FoodSafety.gov charts repeat the temperature so duck, goose, and turkey share one finish line.
Fat is the bonus, not the waste: drain the rendered gold for roast potatoes and rest the bird 15 to 20 minutes. Tent with foil when the skin browns ahead of the thigh reading.
How to use
- Pick pounds or kilos.
- Type the duck weight.
- Pick stuffed or unstuffed.
- Read the time band first.
- Read 165 F beside it.
- Thaw by the fridge day count.
Formula
- lb
- Duck weight in lb, from kg x 2.20462.
- stuffed
- Yes adds 15 low and 30 high minutes.
- 165 F
- Universal poultry endpoint, 74 C.
Kilos convert to pounds first (x 2.20462), then the same math runs. The 165 F poultry endpoint and fridge thaw pacing follow USDA FSIS poultry guidance echoed on FoodSafety.gov. Stuffing slows heat, so stuffed birds carry the longer band and need a center check.
Worked example
Example: 5 lb unstuffed duck
Imperial defaults: 5 lb duck, unstuffed.
- Bird: 5 lb duck, unstuffed, at 350 F.
- Low: 5 x 20 = 100 min = 1 h 40 min.
- High: 5 x 20 + 15 = 115 min = 1 h 55 min.
- Safe: 165 F in the thigh, 74 C.
- Thaw: ceil(5 / 4) = 2 days fridge thaw.
- Tool shows 1 h 40 min to 1 h 55 min, 165 F (74 C), 2 days fridge thaw.
Reference table
| Bird | Band | Thaw |
|---|---|---|
| 5 lb unstuffed | 1 h 40 min to 1 h 55 min | 2 days |
| 6 lb stuffed | 2 h 15 min to 2 h 45 min | 2 days |
| 4 lb unstuffed | 1 h 20 min to 1 h 35 min | 1 day |
| 2.27 kg unstuffed | 1 h 40 min to 1 h 55 min | 2 days |
Limits
- Whole birds 2 to 14 lb; parts roast faster.
- Fat ducks brown fast; tenting assumed.
- Oven truth varies; thermometers rule.
- Brined and dry aged birds shift timing.
Common mistakes
- Serving at pink thigh below 165 F.
- Thawing on the counter.
- Skipping fat draining, then steaming skin.
- Carving without the 15 minute rest.
- Trusting pop up timers alone.

Quick checks. Answers sit tucked under each question.
6 lb stuffed duck?
Low 135, high 165: 2 h 15 min to 2 h 45 min, thaw 2 days.
4 lb unstuffed duck?
Low 80, high 95: 1 h 20 min to 1 h 35 min, thaw 1 day.
30 lb bird?
Over 14 lb exceeds this table: roast longer and slower, checking 165 F.
Questions
What temp is duck done?
165 F in the inner thigh, wing joint, and breast, away from bone. Ducks run fatty, not forgiving.
Minutes per pound?
About 20 minutes per pound at 350 F, plus 15 to 30 stuffed. This tool formalizes that band.
Crisp skin method?
Score the skin, roast breast up on a rack, drain fat as it renders, rest 15 to 20 minutes.
How long to thaw?
Roughly a day per 4 lb in the fridge. A 5 lb duck needs 2 days; never thaw on the counter.
Stuffing changes time?
Yes, and it adds 15 to 30 minutes while demanding the center hits 165 F too.
Fat management tips?
Prick and drain without piercing meat, save the rendered fat for potatoes, and tent if browning runs ahead.
