What it does

Egg sizes weigh dozens, not shells. Jumbo runs 30 oz per dozen down through Large at 24 to Peewee at 15, so 6 jumbo eggs stand in for 7.5 large. Recipes written for Large need translation for every other carton.

The tool above converts count to weight with large-egg equivalents attached. Enter count and USDA size, and it prints ounces, grams, and large equals. Defaults show 8 large at 16 oz; 10 medium weigh 17.5 oz like 8.75 large.

Federal graders define the scale. USDA AMS terms list 30/27/24/21/18 dozen ounces with ARS adding Peewee at 15 plus per-egg and case figures, while the American Egg Board confirms the 50 g large egg. Size means net weight per dozen throughout.

Baking follows weight once converted. Swapping medium for large 1:1 shortchanges batters by an eighth per egg, while jumbo overshoots; equivalents keep ratios exact. Weigh cracked eggs for pastry work.

How to use

  1. Enter the egg count.
  2. Pick the USDA size.
  3. Read ounces first, then grams.
  4. Read large-egg equivalents.
  5. Swap sizes by equivalents.
  6. Bake from weight for precision.

Formula

Ounces = count / 12 x dozen oz (30/27/24/21/18/15). Grams = oz x 28.3495. Large equal = oz / 2.

Egg count, 0 and up.
dozen oz
USDA net oz per dozen by size.

USDA AMS dozen minima with ARS per-egg and case figures; AEB confirms the 50 g large egg.

Worked example

Example: 8 large eggs

Defaults: 8 large eggs.

  1. Inputs: 8 large eggs.
  2. Dozen rate: large runs 24 oz per dozen.
  3. Ounces: 8 / 12 x 24 = 16 oz.
  4. Grams: 16 x 28.3495 = 453.6 g.
  5. Large equal: 16 / 2 = 8. Tool shows 16 oz, 453.6 g, 8 large eggs.

Limits

  • USDA sizes only. Other countries differ.
  • Minimum weights; cartons run over.
  • Weight math; volume separates vary.
  • Cracked weights exclude shells.

Common mistakes

  • Swapping sizes 1:1 in baking.
  • Reading size as dimensions.
  • Ignoring equivalents across cartons.
  • Assuming all larges weigh 2 oz exactly.
  • Cracking by count for pastry.

Quick checks. Answers sit tucked under each question.

6 jumbo eggs?

6 / 12 x 30 = 15 oz. Grams 425.2. Large equal 15 / 2 = 7.5.

10 medium eggs?

10 / 12 x 21 = 17.5 oz. Grams 496.1. Large equal 17.5 / 2 = 8.75.
