What it does

Lamb roasts scale by cut and band: bone-in legs run 20 to 25 minutes per pound under 7 lb but only 10 to 15 past it, while rolled legs and shoulders carry their own rates. Every path ends at 145 F plus rest.

The tool above takes weight with the cut. It returns total time with finish and oven guidance.

The default 6 lb bone-in leg needs 2 hr 12 min to 145 F plus rest. The metric mirror of 2.72 kg reads the same; a 3.5 lb shoulder needs 1 hr 52 min.

Rates follow Foodsafety.gov lamb charts with USDA farm-to-table pages behind them. Both agree on 145 F plus rest and banded rates used here.

How to use

  1. Pick pounds or kilos.
  2. Enter the roast weight.
  3. Pick the cut and band.
  4. Read total time first.
  5. Verify 145 F inside.
  6. Rest 3 min, then carve.

Formula

Total min = weight lb x rate: leg 5-7 lb 22, 7-9 lb 12, rolled 27, shoulder 32. Safety 145 F.
weight
Roast weight in pounds.
rate
Chart rate by cut and band.
145 F
Whole cut minimum with rest.
325 F
Roast oven temperature.

Kilos convert to pounds first (x 2.20462). Rates use chart midpoints with bands noted; thermometers overrule every minute. Rest 3 min minimum tented; higher doneness may run to 160+ by preference.

Worked example

Example: 6 lb leg of lamb

Imperial defaults: 6 lb bone-in leg.

  1. Cut: bone-in leg 5-7 lb at 22 min/lb.
  2. Weight: 6 lb.
  3. Total: 6 x 22 = 132 min.
  4. Format: 132 min = 2 hr 12 min.
  5. Pull at 145 F thickest, away from bone.
  6. Rest 3 min tented before carving.
  7. Tool shows 2 hr 12 min, 145 F + 3 min rest, 325 F roast.

Limits

  • Times estimate; thermometers rule.
  • Chart midpoints, bands noted.
  • Ground lamb always 160 F.
  • Ovens vary; check early.

Common mistakes

  • One rate for all leg sizes.
  • Skipping the 3 min rest.
  • Probing bone not meat.
  • Roasting under 325 F.
  • Trusting color over temp.

Quick checks. Answers sit tucked under each question.

3.5 lb shoulder?

3.5 x 32 = 112 min = 1 hr 52 min.

8 lb leg bone-in?

8 x 12 = 96 min = 1 hr 36 min.

4 lb rolled boneless leg?

4 x 27 = 108 min = 1 hr 48 min.

Questions

What is the safe temp for lamb?

145 F plus 3 min rest for whole cuts; 160 F for ground lamb with no rest rule cited.

Does one rate fit all legs?

No: larger legs run fewer minutes per pound (10 to 15 past 7 lb). Weight bands matter.

What about boneless and shoulder?

Yes: 25 to 30 min/lb rolled, 30 to 35 shoulder, all to 145 F plus rest.

How long do lamb chops broil?

Yes: 7 to 11 minutes total for 1 to 1.5 in chops, still 145 F plus rest.

Does ground lamb differ?

Yes: patties and mixtures need 160 F through like all ground meats.

How hot should the oven run?

At least 325 F for roasting; the chart here runs 325 F throughout.
