Pork Roast Time Calculator
Pork roast minutes per pound by cut, with safety temp and pulled finish.
What it does
Pork roasts split into two finishes: sliced loin served at 145 F plus rest, and shoulder cooked past safety toward 200 F probe tender for pulling. Same animal, different clock and thermometer.
The tool above takes weight with cut and finish style. It returns total time with pull temperature and oven guidance.
The default 3.5 lb loin roast needs 1 hr 10 min to 145 F plus rest. The metric mirror of 1.59 kg reads the same, while a 5 lb butt needs 3 hr 45 min to safety.
Times follow Foodsafety.gov roasting charts with Clemson extension handling behind them. Both pin the 20, 12, and 45 minute rates and the 145 F floor used here.
How to use
- Pick pounds or kilos.
- Enter the roast weight.
- Pick the cut.
- Pick sliced or pulled style.
- Read total time first.
- Verify temp, then rest.
Formula
- weight
- Roast weight in pounds.
- rate
- Chart rate: loin 20, crown 12, butt 45.
- 145 F
- USDA whole cut minimum with rest.
- 200 F
- Probe tender shredding zone for butts.
Kilos convert to pounds first (x 2.20462), then the same chart runs. Times estimate only: probe the thickest part away from bone and rest before carving. Pulled style adds hours past safety toward collagen breakdown near 185 to 200 F.
Worked example
Example: 3.5 lb loin roast
Imperial defaults: 3.5 lb loin roast, sliced style.
- Cut: boneless loin at 20 min per lb.
- Weight: 3.5 lb.
- Total: 3.5 x 20 = 70 min.
- Format: 70 min = 1 hr 10 min.
- Pull at 145 F in the thickest part.
- Rest 3 min before carving.
- Tool shows 1 hr 10 min, 145 F + 3 min rest, 350 F roast.

Limits
- Times estimate; thermometers rule.
- Ham cuts live on the ham page.
- Ground pork always 160 F.
- Low ovens under 325 F not advised.
Common mistakes
- Carving without the 3 min rest.
- Pulling at 145 F and serving tough meat.
- Probing bone instead of meat.
- Roasting cold from frozen on chart time.
- Trusting color over temperature.

Quick checks. Answers sit tucked under each question.
5 lb Boston butt, sliced?
5 x 45 = 225 min = 3 hr 45 min to safety at 145 F.
8 lb crown roast?
8 x 12 = 96 min = 1 hr 36 min.
5 lb butt for pulling?
Same 3 hr 45 min safety, then onward to 200 F probe tender.
Questions
What is the safe temp for pork?
145 F plus 3 min rest for whole cuts; 160 F for ground pork with no rest rule cited.
Is pink pork safe?
Yes. Pink can remain at 145 F and still be safe; only the thermometer decides.
When is pulled pork done?
Keep cooking low and slow to about 200 F until probe tender. Safety time alone leaves it tough.
What if the roast is frozen?
Add about one third to one half more time, and still verify 145 F plus rest.
How hot should the oven run?
At least 325 F for roasting; the chart here uses 350 F uncovered.
Does ground pork rest like roasts?
No. Ground mixtures always need 160 F through, with no rest shortcut.
